Tomatoes working process phases
Mediterranea Italia follows the tomatoes production process with particular attention in order to reach the main objective which is to bring high quality products to the market: starting from cultivating and harvesting the freshest tomatoes to processing the raw material up to the packaging of the product into cans, trying to obtain a superlative product which can qualitatively match the market requests.
HARVESTING
Fresh tomatoes are mechanically harvested from the field and transported to the plant in plastic containers. they are then thoroughly washed through pressurized water and air insufflation in order to remove all soil residue.
SELECTION AND PACKAGING
During the next phase they are firstly sorted by hand to eliminate all unripen tomatoes, they are then separated from the peel and transferred back to the sorting tables, whereby the qualified staff examines and eliminates any tomatoes which remained not intact.
After the filling process, the filled cans are sent to be sterilized at 212 °F/ 100 °C. They are then cooled and marked with the indelible code, requested by law. The coding system contains all the technical analysis of each production and enables us to trace the product back to its initial origin.
Once complete, the product is palletized on fumigated wood-burning platforms and stored for at least a month before being labeled, packaged and shipped.
